Green Curry Noodle Soup
Ingredients
- Rice noodles
- 2 tablespoons green curry paste
- 1 can coconut milk
- Vegetable stock
- Bok choy or spinach
- Lime, basil, and chili crisp
Method
- Fry curry paste in a little oil until fragrant.
- Add coconut milk and stock, then simmer for ten minutes.
- Cook noodles separately and divide into bowls.
- Add greens to the broth, ladle over noodles, and finish with lime.
