Charred Lemon Herb Chicken
Ingredients
- 4 boneless chicken thighs
- 2 lemons, halved
- 2 garlic cloves
- Oregano and parsley
- Olive oil
- Arugula or mixed herbs
Method
- Marinate chicken with garlic, oregano, olive oil, and lemon zest.
- Sear until deeply golden, then finish covered over medium heat.
- Char lemon halves cut-side down in the same pan.
- Serve chicken with herbs and warm lemon juice.

Let the chicken rest for five minutes before slicing to keep the juices in.
