Green Curry Noodle Soup

Ingredients

  • Rice noodles
  • 2 tablespoons green curry paste
  • 1 can coconut milk
  • Vegetable stock
  • Bok choy or spinach
  • Lime, basil, and chili crisp

Method

  1. Fry curry paste in a little oil until fragrant.
  2. Add coconut milk and stock, then simmer for ten minutes.
  3. Cook noodles separately and divide into bowls.
  4. Add greens to the broth, ladle over noodles, and finish with lime.
